ORIGIN: Alentejo, the sub-region of Vidigueira.
VARIETIES: 100% Alicante Bouschet.
HARVEST: Manual harvest for 12kg boxes, held in August 2021.
VINIFICATION: Manual selection on a vibrating sorting table, followed by stemming and light crushing. Alcoholic fermentation at a controlled temperature of 25ºC, in mills with mechanical treading. Aging in new 500 liter French oak barrels for 18 months, followed by aging in bottle.
PAIRING: Pairs ideally with red meat and hunting dishes.
Tasting Notes: Deep and concentrated ruby color. Aromas of black fruit jam and spice, perfectly integrated with the toasted notes from the aging in wood. In the mouth it has a good structure, prolonged with a long and persistent finish.
