VARIETIES: 70% Pinot Noir, 30% Chardonnay
VINIFICATION: The color is very warm, reminiscent of very old champagnes or sweet wines over thirty years old. Amber, with copper reflections, almost red. The first nose is powerful with candied cherry, warm spices (turmeric) and almond. Then the expression becomes more complex and refined: chocolate, candied orange peel, cherries in brandy and quince jelly with hints of cinnamon. After aeration and a few degrees, dried fruits (apricots), poached pears and even grapes should appear. As if this Ratafia champagne rejuvenates when heated! Very flexible and smooth in the mouth, we are immediately under the influence of its creamy texture. This fullness is confirmed throughout the test. Its late summer sweetness brings us gourmet aromas of dried apricots, cocoa and cherry. The finish is long, pure, with a very pleasant acidity that leaves the mouth perfectly clean.
Pairing It accepts extravagant combinations with foie gras, savory/sweet candied meats (tagine, game with fruit), fatty cheeses and, of course, the entire range of desserts.
