Brut Rose

ORIGEM: Alentejo, sub-region of Vidigueira.

VARIETIES: 85% Touriga Nacional and 15% Baga.

HARVEST: Manual harvest for 12Kg boxes during the early hours of the morning

VINIFICATION: Cooling the grapes in a cold room for 24H to 10ºC. Manual selection on a vibrating sorting table. Vacuum pressing of whole bunch of grape, followed by cold settling for 48 hours. Individual fermentation of each variety in stainless steel tanks with controlled temperature. The second fermentation is done in the bottle, followed by aged on lees for another 18 months.

HARMONIZATION: Ideal as an aperitif, also with fish, seafood and roasted piglet.

Tasting Notes: Salmon color, delicate and fresh aroma, with raspberries and wild berries notes. Creamy and elegant texture in the mouth. Very slim bubble, lively and refreshing acidity. Alcohol content (% vol.): 12.2 %.
